About the role
Four Seasons Resort The Nam Hai, Hoi An, Vietnam is currently looking for a Restaurant & Bar Manager who shares our passion for excellence and is enthusiastic about creating memorable guest experiences. The Restaurant & Bar Manager is part of a diverse and dynamic team that provides award-winning service to our valued guests. This position reports to the Assistant Director of Food & Beverage.
What you will do
Major Responsibilities
General
- Builds a motivated and skilled team, leads by example, and instills a culture of continuous learning and improvement among employees; actively participates in Employee Relations activities and programs
- Actively plans and manages the career development of every employee through effective coaching, training, and by instilling company values; is concerned with employees' continuous development and personal growth
- Organizes and manages the department in accordance with company philosophy and policies, maximizing efficiency and productivity and achieving established goals; promotes harmony between departments
- Displays warmth, care and genuine enthusiasm when dealing with guests and internal customers; lives the Golden Rule
- Demonstrates standards awareness, by setting example for standards execution, standards testing, and implementing action plans to achieve established product and service goals
- Prepares annual plans and forecasts, consistently monitors and manages budgetary goals
Departmental
- Assists the Assistant Director of Food & Beverage to manage and oversees the overall Food & Beverage Division.
- Works closely with all related departments to ensure continuous and proper support to run a smooth operation.
- Interacts with guests, providing full knowledge and assistance for maximum guest usage in a friendly but unobtrusive manner.
- Well-versed with all Food & Beverage and Resort offerings and be able to confidently discuss with the guest.
- Formulates and recommends changes to improve the food & beverage product, menu, and offerings.
- Controls usage of Food & Beverage items and ensures proper usage of all equipment
Specific Responsibilities and Tasks
General
- Maintains an organized administration of departmental and personnel records, including rostering and leave planning
- Ensures employees adhere to the code of conduct and grooming & hygiene standards as specified in the employee handbook
- Conducts daily briefing and monthly departmental meeting (with minutes copied to division head) and participates in meetings when invited
- Provide regular and fair performance feedback to employees, formally and informally as appropriate
- Is seen as a hands-on leader, assists employees in crunch times; Walks the talk
- Maintains a clean and orderly work area and ensures tools & equipment are well maintained and in sufficient supply
- Promotes and ensures a safe working environment
- Performs any additional duties as assigned
Departmental
- Possess in-depth knowledge of all food & beverage facilities in the Resort.
- Actively get involved in the operation, ensuring that all the standards are met and executed. To support outlets during peak hours and ensure maximum guest satisfaction.
- To inspect the back of the house regularly and work closely with all concerned departments to rectify defects.
- Constantly work with department heads, chefs, and the Assistant Director of Food & Beverage to continuously improve the products for maximum guest satisfaction.
- Work closely with all outlets, chefs, chief stewards, and the Assistant Director of Food & Beverage on cost controlling in all aspects.
Handle and ensure proper handling of all guest complaints in the food and beverage division. Follow up on glitches and resolve them amicably. Put strategies and processes in place for reoccurring glitches in the Food & beverage division.
What you bring
Special Requirements
- Has 4 - 5 years of relevant experience in a 5-star hotel/resort
- Possesses aptitude, management skills, and upward mobility
- Possesses business acumen, well-developed guest PR skills, and personal flair
- Has a well-developed interest in food and wines; has undergone professional training in food and wine knowledge; is a 'foodie'

Schedule & Hours:
• Full time, 44 hours however may required to work late based on client's need and 5 working day week with overlapping to cover weekends e.g. Wed - Sun or Tues to Sat. Schedule will take turns.
