Job Description

REPORTING TO:  Food Services Supervisor/General Services Supervisor

SUMMARY OF DUTIES

Under the direction of the Food Services Supervisor or General Services Supervisor, the Cook is responsible for the overall preparation of all foods, provides support and guidance to other dietary team members and monitors meal service in the dining room. This includes but not limited to meals are attractive and nutritious, food preparation according to Extendicare’s policies and procedures, menus and work routines, while ensuring a safe and sanitary environment.  The Cook is responsible for the operation of the Dietary Department and the supervision of Dietary Aide staff in the absence of the Supervisor.

QUALIFICATIONS:

Ability to read, write and speak English as well as to understand verbal and written instructions in English Post secondary education in institutional food preparation. is preferred.  Experience in long term care or seniors housing preferred. Combination of experience and education will also be considered. Have a current food handlers certificate. Demonstrates concern and interest in providing quality care and service for residents. Demonstrated leadership and organizational skills. Mentally and physically able to perform duties and achieve regular attendance. Ability to communicate with other staff, residents, families and the public. Complete all education as required by Extendicare

DUTIES AND RESPONSIBILITIES:

Provides for the nutritional needs of residents by following Extendicare menus, special diets and recipes and production sheets.  Recommends to the Food Services Supervisor/General Service Supervisor changes in menus which reflects residents choice and cost effectiveness. Ensures that food is prepared and served following techniques to ensure optimum nutritional quality, flavor, appearance and proper temperature and provides support and guidance on this matter. Makes efficient and proper use of food, dietary supplies, dishes and cutlery to control costs and assist in maintaining adequate inventories and ensure proper quality. Ensures proper storage procedures are followed for food purchases and other supplies.  Following delivery verifies invoice to items delivered.  Advises supervisor of any damaged, short or incorrect items. Advises the Food Services Supervisor/General Services Supervisor of needed equipment and utensils, maintenance requirements and food purchase requirements. Performs duties in accordance with prescribed sanitation and infection control procedures, eg. Food handlers. Participates in special events by preparing food as required. Supervises Dietary team members in the absence of the Supervisor. Performs all duties in accordance with the written policies and procedures of Extendicare, the facility and the Dietary Department. Participates in evaluating care and / or services provided by the Dietary Department to residents under the facility Quality Assurance/Quality Improvement Program. Performs all duties in a safe and efficient manner, adhering to job specific Safe Work Procedures,  and maintains work area in a clean, orderly and safe condition. Follows manufacturers’ instructions in the operation and use of all equipment and chemicals. Reports unsafe and hazardous working conditions and any equipment malfunctions to the supervisor. Knowledgeable of facility procedures for fire and environmental safety. Adheres to “Standards of Employee Conduct,” “Commitment to Residents” , Bill of Rights”, and “Extendicare Quality Care Standards”.” and Mission, Vision and Values. Works closely and cooperates with other teams within the home.  Participates in inter-disciplinary care conferences, committees and meetings as required. Responsible for the development and upgrading of his / her knowledge and skills.  Attends in-service sessions and conferences as required.
