Located on the southeastern coast of the pristine island of Lāna’i, lies the secluded retreat of Four Seasons Resort Lāna’i, an oceanfront destination offering travelers a curated, personalized island escape. SUSHI COOK II 

The Four Seasons Resort Lāna’i is looking for a Sushi Cook II who shares a passion for excellence and who infuses enthusiasm into everything they do. Our teams’ have the opportunity to shape our guest experience by providing exceptional knowledge of the Resort and exemplifying the Golden Rule in each interaction. Work authorization required. 

 

WHAT YOU’LL DO 

Our Sushi Cook II’s are responsible for preparing and plating menu items to Four Seasons standards. This role requires proficiency in knife skills, the ability to work all stations, understand product usage and availability, and lead the kitchen in the absence of a Sushi Cook I. As a team leader, the Sushi Cook II supports daily kitchen operations, menu planning, and training, while fostering a positive, professional work environment. Responsibilities include, but are not limited to, the following: 

  • Prepare all basic ingredients, sauces, and set-ups for the sushi bar, ensuring stations are fully stocked and ready daily for service.  

  • Manage inventory, sanitation set-ups, and maintain accurate records.  

  • Set up the sushi bar before service, including refilling containers and sauce bottles with backups.  

  • Complete weekly prep tasks as assigned by the sushi supervisor or chef within specified timelines.  

  • Assist with sushi plating and roll preparation during service.  

  • Understand fish descriptions, identification, preparation methods, and maintain quality according to Nobu standards 

  • Responsible for all final fish preparation at the sushi bar display counter. 

  • Inspect all seafood for quality and quantity needed for service; sushi supervisor/chef will perform final safety and standards inspection. 

  • Prepare and cook rice, ensuring all meets Nobu standards. 

  • Prepare, execute, and present Nobu Tamago according to standards. 

  • Demonstrate advanced fish identification and butchery skills. 

  • Perform advanced sushi plating, including Nigiri, Maki, and Sashimi, meeting Nobu standards; assist sushi supervisor/chef with omakase tasting menu execution. 

  • Record daily fish inventory and quality for all seafood in the display counter after service. 

  • Handle fish pre-ordering and coordinate with sushi supervisor/chef as needed. 

  • Meet advanced fish butchery requirements and Nobu standards. 

  • Demonstrate advanced sushi knife skills for sashimi; meeting Nobu Sushi Cook II standards is required for promotion to Nobu Sushi Cook I.

WHAT TO BRING 

  • Successful candidate must possess legal work authorization in United States 

  • Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card  

  • Advanced culinary and sushi experience is required for this position 

  • Ability to stand for extended periods, lift up to 50 lbs, and push/pull as needed during shifts 

  • Weekend and Holiday availability required.
