What we expect:
Job duties include but are not limited to:
Select, train, evaluate, lead, motivate, coach, and discipline all employees in the Stewarding Department to ensure that established cultural and core standards are met.
Ensure the organization and sanitation of all kitchens, storage areas, employee dining room, waste receptacle areas, compactor room, carts, tables, and Stewarding Department equipment and machinery through constant monitoring and adherence to a vigorous cleaning schedule.
Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
Ensure proper use and provide regular care, security and maintenance of machinery and equipment used in the Stewarding Department.
Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.
The ability to work closely with the Executive Chief Steward to coordinate an adequate supply of china, silver, glass and other equipment used in service.
Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact.
Work harmoniously and professionally with co-workers and supervisors.
Wash china, silver, glassware, pots, and pans and distribute to operational areas.
Assist with cleaning of kitchen and Stewarding Department areas.
Provide physical maintenance of operating equipment.
Stewarding functions include setting up workstations, cleanliness and storage of dishes, filling dish machines, ensuring correct chemical levels, and maintaining efficient traffic patterns in the kitchen.
Determine the minimum and maximum stocks and control the par stocks of all materials and equipment
Liaise with the Purchasing Department and suppliers regarding purchasing needs for the stewarding operation
Conduct daily briefings as needed to obtain optimal results
May conduct inventories as needed
May assist with other duties as needed which may include but are not limited to providing assistance with food dish-up, completing set-up sheets, and delivery of food and equipment for banquet events.
Supervise day-to-day operations and assignments of the stewarding staff, communicate objectives and expectations, and assign/schedule work
Control and analyze cost, breakage, and quality of support provided to outlets, banquets, and other areas
Ideal candidate will have:
High school education or equivalent experience
Previous experience as an Assistant Chief Steward or equivalent Food & Beverage supervisory experience is required.
Requires a working knowledge of department services as well as Four Seasons cultural and core standards, policies, and standard operating procedures. Working knowledge is generally learned on-the-job.
Experience required by position is from 1 to 2 years of employment in the related position with Four Seasons or other organization.
