Job Description:

III    Principal Duties and Responsibilities
a.    Prepare the dough in anticipation of the product runs for upcoming batches according to the production schedule.
b.    Check production schedule daily and plan mixes accordingly.
c.    Accurately weigh and measure all hand-add ingredients listed on the formula sheet. Ensure all ingredients used, match the product item number listed on the formula sheet and that it is of acceptable quality. 
d.    Add hand-added ingredients to the mixer according to the sequence on the formula/mixing sheet.
e.    Fill out and intial all production documents associated with your area of responsibility before turning those in at the end of the shift. 
f.    Inspect dough for consistency, monitor and record dough temperatures on the formula sheet when dough is completed, along with the temperature of the raw materials if required. Regulate dough temperatures with appropriate methods depending on temperature and formula.
g.    Clean and inspect equipment and ingredient containers as required by schedule. Relabel if necessary. 
h.    Understand and comply with the allergen policy.
i.    Understand, observe, and comply with the handling and usage of the color code system.
j.    Maintain a clean work area. 
k.    Assist in the training of employees.
l.    Follow and observe all Plant policies/procedures, including safety at all times.
m.    Perform all duties necessary to meet Safe Quality Food (SQF), Company, and/or Regulatory requirements/standards as prioritized by the Company.
n.    Initiate action to prevent the occurrence of non-conformaties relating to Food Safety and the Food Quality of the product, processes, quality system, or safety system.
o.    Identify and record any problems relating to Food Safety and Food Quality of the product, processes, quality system, or safety system.
p.    Control further processing or delivery of non-conforming product in terms of food safety or Food quality issues, until the deficiency or unsatisfactory condition has been corrected. 
q.    Inform Operator, Line Lead and Supervisors, or other management of any Food Safety or Food Quality concerns or of any processes which become non-compliant with specified requirements.
