Position Information
The Meat Science Laboratory Technician, under general supervision, oversees the processing of beef, pork, and lamb carcasses and maintains the sanitation of the Meat Laboratory.
Responsibilities:
-Reviews and maintains accurate records for Hazard Analysis and Critical Control Points (HACCP) and Food Safety and Inspection Service (FSIS).
-Conducts and supervises the harvest of cattle, swine, and sheep.
-Conducts and supervises the processing of beef, pork, and lamb carcasses.
-Conducts and supervises the sale of beef, lamb, and pork products.
-Assists with meat science research projects and laboratories.
-Orders supplies and equipment used in the performance of maintaining the laboratory and processing meat products.
-Assists with short courses, public exhibitions, and other activities associated with the Meat Laboratory.
Required Qualifications:
-High school diploma or equivalent combination of education and experience.
-Five years of related experience in the meat industry.
Other Requirements:
-Knowledge of Hazard Analysis and Critical Control Points (HACCP) and Food Safety and Inspection Service (FSIS) procedures.
-Ability to multitask and work cooperatively with others. Ability to harvest and process beef, lamb, and pork.
