The purpose of the Bakery Manager role is to drive commercial performance, operational excellence, and product quality within the bakery department. The role ensures consistent delivery of high-quality bakery products, strong sales and margin performance, compliance with food safety standards, and a positive customer experience while leading and developing a skilled bakery team.

Minimum Requirements:

Grade 12 (essential)

Preferably NQF 3 Bakery qualification.

2- 4 years' experience as a Baker, with at least 1-2 years in a supervisory/management role.

Food safety and hygiene certification is highly advantageous.

Competencies:

Leadership: Ability to lead and motivate a team, providing clear direction and ensuring that staff are well-trained and productive.

Time Management: Ability to manage time efficiently, prioritizing tasks to meet production schedules and customer demands.

Customer Service: Strong interpersonal skills with a focus on providing excellent service and resolving customer issues effectively.

Financial Acumen: Experience in budgeting, cost control, and financial reporting. Understanding of pricing strategies and profitability management.

Problem-Solving: Ability to handle production issues, staff concerns, and customer complaints quickly and effectively.

Key Responsibilities:

Operational Management:

Oversee daily operations of the bakery, including production schedules, staffing, and workflow management.

Ensure the bakery is clean, well-organized, and meets health and safety regulations.

Manage inventory, order ingredients and supplies; track stock levels to avoid shortages or excess.

Analyse sales data to adjust production levels, track fast selling products, and identify implications on margin and sales growth opportunities.

Monitor the implementation of all promotional activities to ensure adherence to promotional

Product Quality Control:

Monitor and maintain high quality standards of bakery products, ensuring consistency in taste according to recipe specifications, presentation, and freshness.

Follow quality control processes and check finished products before sale; troubleshoot any production issues.

Staff Management:

Foster a positive working environment, promote teamwork, and provide continuous training to improve staff performance.

Manage and handle any staff procedural, policy and legislative non-compliance.

Schedule shifts according to department’s peaks and valleys, assign tasks, and ensure proper coverage during peak times.

Customer Service:

Ensure the department offers excellent customer service and handle any customer complaints and/or feedback.

Financial Management:

Manage the bakery’s budget, track expenses, and control costs to ensure profitability.

Monitor financial performance and report on key metrics i.e. sales, profit margins, and waste management.

Identify opportunities to increase turnover and mitigate barriers to achieving budget.

Compliance and Health Standards:

Ensure compliance with food safety, hygiene, and health regulations.

Maintain bakery equipment and ensure in working order by adhering to scheduled repairs or any replacements needed are done.

Enforce food safety by implementing daily checklist and maintain health and safety standards.
