The Role of the Kitchen Steward
The role of the Kitchen Steward is to wash and store all pots, pans, dishes and kitchen utensils/equipment: mops floors, assists in garbage disposal and completes other special cleaning projects in the proper manner during the assigned shift. The Kitchen Steward is also responsible for the sanitation of the general kitchen area and other assigned projects
Key Functions
Clean and sanitize pots, dishes, silverware and other utensils used in the kitchen according to standards
Utilize correct cleaning agents for designated items according to standards
Keep pots and pan storage racks clean, including surrounding counters, walls and closets
Clean all floor areas in the kitchen, dining room, and other back-of-the-house areas using prescribed chemicals, supplies and equipment
Clean all mobile and stationary equipment including mats
Ensure items are air dried before storage and maintain organization of supply/storage closets
Store wares in neat fashion and rotate stock so that all items are used regularly
Remove trash to dumpster, empty and clean containers and compactors according to standards
Exercise initiative in helping keep area clean, and help keep trash off the floor and out of the kitchen as the situation dictates
Organize the breakdown area for drop off of soiled wares according to department standards
Organize and restock work areas for next shift as specified by departmental standards
