The Kitchen Manager is responsible for overseeing all kitchen operations, including menu planning, provisioning, food preparation, and sanitation. This position also directs the training of culinary staff and other kitchen personnel engaged in preparing and cooking food to ensure efficient and profitable food service. ESSENTIAL DUTIES
Ensure all outlets and departments comply with established health and safety procedures, as well as company and departmental policies
Properly store food and equipment in correct and allotted areas
Supervise, staff, coordinate and participate in the daily operations of assigned restaurant kitchen facilities
Assist the Director of Culinary in supervising kitchen staff regarding proper food handling, including rotation and sanitation
Support Resort Culinary Management team in supervisory role as manager on duty when necessary
Open and close kitchens according to schedule/guidelines/assignments. Assist in the creation, usage, and follow through of prep lists, cleaning list, and closing lists
Supervise and coordinate food, supply, equipment, and inventory control purchasing for operations. Coordinate food and menu costing (COGS). Work directly with purchasing agent on par levels and supply management
Work with outlet chefs on staffing needs and labor control
Oversee or directly supervise all food preparation, quantify and production activities
Conduct training as determined by management
Other duties as assigned
Administrative duties included but not limited to; Hiring, Scheduling, Timekeeping, Ordering, Monthly Inventory
REQUIRED QUALIFICATIONS
Minimum 4 years’ experience in Chef capacity at a hotel, restaurant, or equivalent as a Banquet or Restaurant Chef required
Must be able to read, write, and speak fluently in English; Spanish proficiency is a plus
Broad and in-depth knowledge and skills in food preparation, cooking, and presentation; strong knife-handling skills and understanding of food characteristics, including shelf-life and expiration
Prior management experience required
Strong planning, administrative, supervisory, and mathematical skills, along with budget management experience, are required
Ability to work effectively with a variety of company personnel and outside vendors
Knowledge of Microsoft Outlook, Excel and Word required, as well as Food Trak is preferred
Ability to work effectively with diverse company personnel and external vendors
Ability to solve problems effectively and maintain positive relationships with guests and staff, including management, subordinates, and co-workers
Serve as a consistent role model for the company’s Service Excellence standards
Must hold a current Food Manager and Allergy Training certificate or complete the Food Manager and Aller-Train certification courses for Alterra Mountain Company within 14 days of employment
EDUCATION REQUIREMENTS
High school diploma or GED equivalent
The base salary range below reflects the low and high ends for this position. Actual pay may vary based on factors such as experience, education, training, location, performance, responsibilities, and required travel. This range is only one part of Steamboat Ski & Resort Corporation’s total compensation package, which may also include region-specific benefits
Steamboat Resort Salary Range: $60,000 - $70,000 per year
This salary range is a projected amount based on 12 months of employment; however, seasonal positions typically span 6 to 8 months. Therefore, you will not receive the full annual salary in this timespan, but rather a prorated amount corresponding to the duration of your employment.
PHYSICAL REQUIREMENTS
Must be a minimum of 18 years of age
Must lift and carry up to 50 lbs. (i.e., a sack of potatoes or stacked supplies)
Must stand for long periods of time or walk for up to six hours.
The senses of taste and smell are used frequently, the use of hands and arms for periods of up to six hours, peripheral, color, and depth vision are essential.
Must handle operation of knives
