THE JOB:
As Executive Steward at Beau Rivage, you will lead the engine behind our world-class culinary operations. From overseeing stewarding operations property-wide to driving financial performance and team engagement, you will ensure our back-of-house standards match the excellence our guests experience front of house.
This is a high-impact leadership role responsible for operational efficiency, regulatory compliance, team development, and financial accountability — all while maintaining the highest standards of cleanliness, safety, and organization across our Food & Beverage outlets.
THE DAY-TO-DAY:
Lead and oversee daily stewarding operations to ensure departmental goals are met — and consistently exceeded
Drive service, financial, and human resource objectives in alignment with property strategy
Create a culture of teamwork, accountability, recognition, and mutual respect
Oversee hiring, training, coaching, and succession planning while upholding diversity commitments and compliance standards
Review monthly P&L statements and departmental budgets, identifying opportunities to improve cost controls and operational efficiencies
Maintain staffing levels within allocated budgets and manage scheduling, attendance, and performance documentation
Conduct routine walk-through inspections of kitchen and stewarding areas to ensure cleanliness, organization, and full health code compliance
Coordinate with the Health Department, regulatory agencies, and outside vendors to ensure seamless operations
Partner with Food & Beverage leaders to support outlet equipment needs, requisitions, and operational functionality
Communicate effectively across hotel departments to support property-wide success
Ensure adherence to all MGM Resorts programs, policies, and initiatives
THE IDEAL CANDIDATE:
Demonstrates 2+ years of prior relevant work experience
Holds a Bachelor’s degree or 4+ years of equivalent experience
Understands financial accountability, including P&L review and budget management
Leads with integrity, professionalism, and a strong operational mindset
Exhibits confidence navigating compliance, health codes, and regulatory standards
