DIRECTOR, FOOD & BEVERAGE INNOVATION
Job Disclosures:

Compensation:
The salary range for this position is $103,130-$142,320 . Compensation may vary based on candidate location and experience.

Job Summary:
We seek a visionary and highly creative Director, Food & Beverage (F&B) Innovation to lead the development of all food and beverage menus across our growing portfolio. This pivotal role is responsible for ensuring that our F&B offerings are integral, compelling extensions of each location's narrative storyline, significantly elevating the overall guest experience.
The ideal candidate possesses a deep understanding of culinary trends, and, crucially, the ability to translate complex fantasy and story concepts into tangible, marketable, and unforgettable dining and drink experiences.
Key Responsibilities:
Concept-to-Menu Execution: Lead the end-to-end development of all proprietary food and beverage menus for new and existing locations. This includes conceptualization, recipe creation, testing, standardization, and final presentation.
Immersive Integration: Work closely with the Creative, Story, and Operations teams to deeply embed each location’s unique narrative, lore, and aesthetic into the F&B program. Ensure every menu item reinforces the story world.
Ingredient Storytelling: Source and select ingredients, preparation methods, and serving vessels that enhance the thematic integrity of the food and beverage items.
Signature Item Creation: Drive the creation of 'must-try' signature food and drink items that become highly shareable, marketable, and iconic to the guest experience.
Innovation Pipeline: Establish and manage a systematic process for continuous F&B innovation, staying ahead of consumer trends (e.g., dietary needs, mixology, sustainable practices) and competitive offerings in the entertainment and themed dining space.
Standardization & Scalability: Ensure all developed menus and recipes are easily scalable, profitable, and maintain consistent quality across all five current locations and the two planned openings.
Operational Partnership: Collaborate closely with location Operations teams, and Corporate Purchasing team to ensure menu items are operationally feasible, cost-effective, and meet all health, safety, and regulatory standards.
Vendor Management: Identify, vet, and manage relationships with key F&B suppliers who can support our commitment to unique, high-quality, and themed ingredients.
P&L Impact: Monitor the financial performance of all F&B offerings, focusing on optimizing Cost of Goods Sold (COGS), labor efficiency, and maximizing revenue through strategic menu pricing and item placement.
Forecasting & Budgeting: Contribute to annual F&B budgeting and forecasting efforts for innovation and roll-out costs.
Required Qualifications
Experience: Minimum of 7-10 years of progressive experience in multi-unit food and beverage management, culinary development, or product innovation, preferably within the themed entertainment, hospitality, or restaurant group sector.
Creative Acumen: Proven ability to translate abstract creative concepts, narratives, or themes into marketable, executable food and beverage products. Portfolio or examples of concept-driven menu creation required.
Technical Skills: Strong culinary and mixology background, working directly with teams on recipe development, costing, and standardization. Expertise in both food and contemporary beverage/mixology trends is required.
Leadership: Demonstrated leadership skills with experience managing creative processes and cross-functional teams (Creative, Operations, Marketing).
Education: Bachelor’s degree in Culinary Arts, Hospitality Management, or a related field preferred.

Work Environment:
This job operates in a professional office environment. This role routinely uses standard office equipment such as computers, phones, photocopiers, filing cabinets and scanners. This position also works in an indoor setting with exposure to noisy environments, dim lighting, strong visual effects including strobing lights, special effects, fog machines and small and/ or enclosed spaces.
Physical Demands:
The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. Physical ability to walk, stand, take stairs/slides/elevators, and navigate the elements during the day and night. Employee may be required to remain in a sitting or standing position for prolonged periods, and repeat motions that may include the wrists, hands, and/or fingers. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus. Must be able to lift up to 10 pounds at times.

Work Schedule:
This is a full-time position averaging 40 hours a week, Monday to Friday, 9am to 5pm MT or 10am to 6pm MT – occasionally requiring flexibility to work during evenings or weekends based on business needs, as well as travel to off-site locations depending on the role and need.
Supervisor Responsibilities:
This position does not require supervisory responsibility.
