Key Responsibilities
Culinary Operations
- Specialize in pizza making
- Prepare all dishes according to established recipes, timing, and presentation guidelines.
- Maintain the cleanliness and hygiene of the assigned station, following HACCP procedures and local regulations.
- Use raw materials and supplies efficiently to minimize waste.
- Ensure all mise en place is completed for service periods.
- Verify the quality, quantity, weight, and price of all merchandise received for the station.
- Monitor expiration dates and ensure food safety compliance at all times.
- Participate in daily and weekly service meetings and briefings.
- Contribute to menu development with creative suggestions and recipe enhancements.
Station Management
- Organize and coordinate the station’s operations and redistribute tasks among the team.
- Supervise and lead demi chefs and commis assigned to the station.
- Take responsibility for station inventory, ordering, and equipment maintenance.
- Replace lower-level team members or Junior Sous Chef when required.
- Ensure proper storage and cleanliness of all cold storage and equipment.
Team Leadership
- Train, guide, and motivate junior staff on techniques, recipes, and kitchen procedures.
- Foster a positive and respectful team environment in line with Four Seasons values.
- Participate in creating a productive and harmonious work atmosphere.
- Act as a communication link between kitchen management and line staff.
Compliance & Standards
- Strictly follow all hygiene and food safety regulations (HACCP).
- Uphold all health, safety, and security protocols in accordance with local and company standards.
- Adhere to all Four Seasons quality standards and procedures.
Skills & Competencies
- Strong leadership and team management skills.
- In-depth knowledge of kitchen operations, ingredients, and cooking techniques.
- Ability to manage time efficiently and work under pressure.
- High standards of cleanliness and hygiene awareness.
- Excellent communication skills across all levels of hierarchy.
- Proficient in using kitchen equipment and management tools.
- Ability to execute and adapt feedback from service meetings.
- Full understanding and respect for kitchen hierarchy and organizational structure.
Qualifications
- Culinary degree or equivalent professional training preferred.
- Minimum 2-3 years of experience in a similar role within a luxury or fine-dining environment.
- HACCP certification or knowledge of local hygiene standards.
