The Chef de Cuisine will lead the Culinary team. The Chef de Cuisine position manages the kitchen staff in the procurement, production, preparation and presentation of all food service outlets in a safe, sanitary work environment which conforms to all standards and regulations. This position is expected to achieve profitable, competitive, quality products.
The Role
At Trilith Guesthouse, food is part of the story. The Chef de Cuisine is a hands-on culinary leader responsible for bringing that story to life across Prologue, Prologue Lounge, and Oliver’s Twist Rooftop.
This role blends creativity, leadership, and operational excellence to deliver
elevated, approachable dining experiences that reflect the innovation, craftsmanship, and sense of place that define Trilith. From menu development to mentoring the culinary team, the Chef de Cuisine sets the tone for the kitchen while ensuring consistency, quality, and financial accountability across all outlets.
You are as comfortable leading from the line as you are shaping the bigger picture, creating food that feels intentional, exciting, and tasteful.
Lead the Culinary Vision
- Bring the culinary identity of Prologue and Oliver’s Twist to life through thoughtful menus, seasonal features, and refined execution.
- Cook daily alongside the team, setting the standard for technique, presentation, and flavor.
- Ensure every plate reflects quality ingredients, attention to detail, and a sense of creativity.
- Support chef-driven experiences including action stations, receptions, live presentations, and theatrical kitchen moments.
Expedite service as needed to maintain a smooth, elevated guest experience
Run a Strong, Efficient Kitchen
- Oversee daily kitchen operations across all outlets with consistency and care.
- Manage food cost, labor, purchasing, and inventory with an eye toward smart controls and revenue opportunities.
- Conduct daily line checks, tastings, and recipe reviews, providing clear, constructive feedback.
- Identify equipment needs and coordinate repairs to keep the kitchen running at its best.
Build and Develop the Team
- Recruit, train, coach, and inspire a talented culinary team.
- Create a kitchen culture rooted in respect, accountability, and pride in the craft.
- Manage scheduling, performance feedback, training, documentation, and corrective action as needed.
- Support continuous learning and professional growth within the kitchen.
- Communicate clearly and collaborate closely with front-of-house leaders and hotel management.
Protect Food Safety & Standards
- Maintain full compliance with local, state, and federal health regulations.
- Enforce SafeStaff practices, proper food handling, and sanitation standards at all times.
- Ensure kitchens are clean, organized, safe, and ready for service.
- Lead by example in safety, cleanliness, and professionalism.
Represent the Brand
- Uphold the standards and values of Trilith Guesthouse, Marriott, and Mainsail Lodging & Development.
- Maintain a polished, professional appearance and presence.
- Take ownership of the success of the restaurants and the guest experience as a whole.
